8 oz. butterscotch chips
1 can sweetened condensed milk
1 tsp. apple cider vinegar
1 tsp. cinnamon
Melt in double boiler, serve warm with tart Granny Smith apples. Delicious!

Swiss Chicken Casserole
Preheat oven to 350.
Place 4 chicken breasts in greased glass dish. Cover with lots of swiss cheese. On top of that, pour 1 can cream of mushroom soup mixed with 1/4 c. milk. Top with 1 c. of Italian flavored bread crumbs (or stuffing - crushed), pour 1/4 c. melted butter on top. Bake for 50-55 minutes.

Holiday Cake
1 box yellow cake mix
2 eggs
1/4 c. water
1 c. pumpkin
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1 pkg. instant vanilla pudding
Combine ingredients, adding pudding mix last. Put in 9x13 pan. Bake at 350 for 30 minutes.
In saucepan combine
1/2 stick butter
1 c. sugar
3/4 c. heavy cream
bring to boil until thick.
Top sauce on cake, add a dollop of whip cream on that!

Greek Salad
3-4 tomatoes diced into small cubes
1 cucumber, peeled and diced into small cubes
2 stalks of green onion chopped finely
1/8 -1/4 c. balsamic vinegar
1/8 c. olive oil
1/2 tsp. oregano
salt and pepper to taste.
Combine ingredient in bowl. Mix well. Let juices marinate in fridge for one hour before serving with crusty french bread.

Authentic Burnt Mexican Salsa
I've been dying to find a recipe for salsa that has the black specks in it...and I came across this one. It is perfect, and now I know that the black specks come from burning the ingredients first! Genius!
8-10 Roma tomatoes
1-2 jalapenos
1 medium onion
3/4 t. lemon pepper
3/4 t. Lawry's seasoning salt
3/4 t. Lawry's garlic salt
3/4 t. salt
1 dash oregano
1/2 t. dried cilantro (coriander)
1 can diced tomatoes
1/2 bunch cilantro (chopped)
Place tomatoes, jalapenos and onion in a frying pan on high heat. You can half the onion and depending on how hot the jalapenos are, you may want to de-vein them. Let the vegetables burn! You will want to turn them every once in a while to get a lot of the outsides nice and black.
Remove from the pan and place in a bowl. Refrigerate until cool. Add remaining ingredients and blend together in a blender. Cool in fridge. Makes TONS.

Honey Mustard Chicken
In bowl, combine:
4 TBS butter, melted
1/4 c. mustard
3/4 c. honey
1/2 tsp salt
1 tsp curry powder
Mix well.
Wash 6-8 chicken breasts with warm water. Dip each piece of chicken in the sauce above (I let it marinate overnight). Place in 9x13 glass dish and bake at 350 for 25-30 min, or until no longer pink.

Oven Roasted Golden Potatoes
4-5 medium sized golden potatoes
4 cloves garlic
1 1/2 tsp. season salt
2-3 TBS. olive oil
1 tsp. dried parsley
1 tsp. black pepper
1 bell pepper finely diced (optional)
Preheat oven to 475. Cut potatoes into 1 1/2 inch cubes. Toss with remaining ingredients. Spread out on cookie dish with sides. Bakes for 30-35 minutes, making sure to toss the potatoes occasionally.

Easy Stroganoff
About a pound of lean ground beef
1/2 onion finely chopped
Brown beef and onion in skillet, add salt and pepper to taste.
Bring pot of water to boil, boil package of your favorite noodles (wavy egg noodles work nicely).
To skillet add:
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 tsp. garlic powder
1 TBS. lemon juice
2 cans mushrooms (pour 1/2 can of the mushroom juice in the skillet, and drain the rest of the juice)
1/2 tsp. black pepper
1/4 c. milk (add more or less for desired consistency)
Let simmer for 10 minutes until well mixed.
Pour over cooked noodles (or rice if you prefer), serve hot, with spinach salad and cooked carrots.

German Pancakes (aka Hootenannies)
A Breakfast Favorite!
Place 6 TBS. Butter in 9x13 pan, stick in oven to preheat to 450. In separate bowl mix:
6 eggs
1 c. flour
1 c. milk
1/4 tsp. salt
Take pan out of oven when butter has melted. Pour mix into pan. Bake for 18-22 minutes, or until puffy and golden brown. Serve with syrup, or if you're adventurous and like it a little more gourmet, try it with sour cream, sliced strawberries and brown sugar. YUM.

Shannon's Dump Cake
Large Can of Cherry Pie Filling (or flavor or your choice)
Box of White Cake Mix
1 Stick Butter (melted).
Preheat oven to 350. Grease casserole dish. Pour in pie filling. Top with box of white cake powder mix. Pour 1 stick melted butter over. Bake at 350 for approx. 45 minutes or until golden brown on top.
